I’m in love with this cookbook. First of all, each recipe indicates the season to cook it. No hunting down ingredients that aren’t in season. Second - this cookbook doesn’t insult my cooking intelligence. It actually includes “real†recipes. No avocado toast or flavored popcorn recipes in this cookbook. This is for real cooks who want to cook fresh, delicious food. Third - everything I’ve made has been amazing. I had no idea a broth made from water could be so delicious. I’ve also discovered the pleasure of grinding my own spices in my coffee grinder. The aroma is wonderful. So thank you for producing a cookbook with truly unique recipes and not just a wash rinse repeat of every other cookbook out there.
This is the first cookbook I’ve ever owned, not living in a very large space I’m very thoughtful about the things I buy, and I finally had to break down and get this. It is not a purchase I regret as this will likely be the only cookbook I ever own!(Unless I buy her other one).It is full of different options for breakfast, lunch, dinner, and desert. Most have very limited ingredients(though not limited in taste) which is amazing for someone who loves to keep as few things as possible.The recipes are so unique, I’ve tried at least three kinds of grains I never even knew existed because of this book. They taste amazing, aren’t too hard to put together-especially not since she’s lays out perfectly what order to do things in and what can sit and cook while you prep other things-, and are so healthy!Have cooked a meal from it every night since I got it, looking forward to the next one!
I'm the long time Golubka's website and Anya's creations follower. Being a vegetarian I cook dishes from her website and 2 books often as well as from my others favorite bloggers websites and have to admit her recipes are more precise. If cooking from the others websites some of the dishes sometimes go wrong, everything that I cooked from this book was great. I can tell she did a hard job polishing her recipes to perfection. I tried the Blueberry buckwheat pancakes, Spring Cabbage rolls, Tomato and eggplant green mung dal, Roasted radish flatbread, almost all her veggie burgers and Apple walnut galettes so far and everything was delicious!!!. Comparing to her firts Vibrant Table book recipes from this book are more simple and easy to make.
I love this cookbook. All the food is excellent.However there is nothing simple about it so don't be deceived by the title. These recipes require time, effort, and sometimes can be expensive to make. Such as the pecan pie. It is creative and a great alternative go to traditional pie but by the time you have acquired all these ingredients (if you don't just have them on hand) you will spend $$$ to make it.The food is 5 stars for sure. The title though really is so deceptive due to time and $ investment to make some of the recipes I just can't give it a 5 star.

The seasonal layout of these recipes was just what I needed for my cookbook collection and my wallet! It's quite a simple pleasure to cook with only the freshest vegetables in season, no more hunting down ingredients! The recipes are easy to follow and so beautifully crafted together by this talented mother/daughter duo. Every bite is a kaleidoscope of colors and an eruption of flavors; sweet, spicy, tangy, savory. Yum! I'm the kind of girl who checks out cookbooks from the library to make sure that I like them. I made three recipes within the first few days of borrowing it & loved every one so I knew it was going into my permanent collection. I love that it's designed seasonally, as I can look for the season and find the ingredients at my local farmer's market. The recipes are fresh and vibrant as the name of the book suggests. I've been preparing vegan meals for the last six years and this is the cookbook I have been waiting for, loaded with veggies, light on the soy. Fun, colorful, and unusual meals. Not unusual in that you'll be looking for ingredients all over the place, unusual in that they are finely crafted recipes that smartly utilize seasonal ingredients that bring a different joy to your plate.
This is ridiculously honestly my first review ever but this amazing cook book is worth of giving 10 great reviews with 10 great stars! The language , the photograps , the ideas are so vibrant yet simple to understand and use . I am in love with every recipe and the foundation idea of how to combinate different foods . So far I have cooked forbidden rice pilaf, healing soup , iron skillet pancake and amazing millet porridge that I never had success with but with the help of Simply Vibrant It turned into a restaurant style meal. I am finaly not afraid to play , to improvise with the food. All recipes are clean , nutritios and deliscious . Highly recommned .
If you love colorful, healthy food with a unique twist, then this is for you. I have Anya’s first cookbook, and adore it as well, but this one is more everyday, adaptable, and pantry-friendly. As with her enticing blog, which inspires me to see cooking as an art that touches all senses, her recipes somehow bring comfort and a healthy satisfaction without pretention. I have tried the Marinated Eggplant, the Summer Porridge, and the Cauliflower/Tahini/Black Rice/Grape Pilaf, all of which are unforgettable and delicious. I enjoy reading everything by Anya in hopes to soak up a little bit of her kitchen ingenuity.
